My favorites are:

Corruption Cards - Game has the player draw cards which alter gameplay in various ways.

Colorful Hell / VDP-MonsterRandomizer - These two mods add new monsters to the game spicing up the gameplay.

Aeons of Death - Adds a bunch of monsters and weapons from other games.

Complex Doom - Adds a lot of new monsters and weapons.

HXRTC Project for Doom and Hexeretic Fantasy for Heretic, made by the same author. That mod is great and allows for a crapton of fun and rage as well. 

Aeons of Death is one that people should try at least once. One of the first randos ever.

Complex Doom and its big brother, Clusterfuck, exists for an insane experience full of frustration and moments that the player gets so OP.

I had a blast with those two monster-randomising mods

-DoomKrakken's Monster Randomizer (the new enemies are durable than Vanilla DOOM's rosters so it's best played in conjuction with other mods like Guncaster)

-Project Brutality (mod based on Brutal Doom with its own roster of enemies. The experience may vary with different monster presets)
